Apple, Raspberry and Date Bircher Muesli

  • 2½ cups oats
  • ¾ cup almonds, flaked
  • ½ cup pepitas
  • 6 medjool dates, pitted and roughly chopped
  • ½ jar Beerenberg Raspberry Jam
  • 300ml apple juice
  • 300ml coconut water
  • Yoghurt and fresh berries, to serve


In a food processor, add half of the oats. Blend until the oats form a very coarse flour.

In a large bowl, place the blended oats, whole oats, almonds, pepitas and dates. In another bowl, combine the Beerenberg Raspberry Jam, apple juice and coconut water. Combine the wet ingredients with the dry ingredients. Place in the fridge to soak overnight.

To serve, layer the muesli with yoghurt and fresh fruit.
