Baked White Fish with Spiced Green Beans and Cherry Tomatoes

Ingredients

  • large handful green beans, tops and tails removed
  • 1 punnet cherry tomatoes
  • 4 fillets of firm white fish such as snapper or ling; or ask your fishmonger
  • ½ bottle Beerenberg African Spice Taka Tala Sauce & Marinade
  • 1 tablespoon butter
  • salt
  • lemon wedges and dill to serve
  • 4x pieces 30x30cm aluminium foil
  • 4x pieces 30x30cm non-stick paper

Method:

Preheat the oven to 180°C. Lay the four pieces of aluminium foil on a workbench and place the non-stick paper on top. To each piece of paper, evenly distribute the green beans, cherry tomatoes, white fish, Beerenberg African Spice Taka Tala Sauce & Marinade and butter. Sprinkle a pinch of salt on each one before folding the paper and foil to produce four air-tight parcels.

Place the parcels on baking trays and into the oven. Cook for approximately 20 - 25 minutes checking that the fish is cooked through before serving. Place the open parcels on plates and top with dill and lemon wedges.
