Ingredients
Unsalted butter, softened
2 slices thick sourdough (or your preferred bread)
1.5 tbsp Beerenberg Balsamic Beetroot Relish
80g mozzarella, freshly shredded
30g feta, crumbled
75g thinly sliced roast beef (deli-style)
3 mint leaves, finely chopped (optional)
Directions
Heat a frying pan over medium heat.
Generously butter the outside of both slices of bread. On the inside of each slice, spread the Beerenberg Beetroot Relish, then sprinkle over the mozzarella.
Place both slices in the pan and cook for 2-3 minutes, until golden underneath and the mozzarella is just starting to melt.
Top both slices with the crumbled feta and chopped mint. On one slice only, layer over the roast beef, then sandwich the toastie together, pressing gently.
Cook for another 1-2 minutes per side, until golden and crisp, and the cheese is fully melted. Slice and serve immediately.
