Banana Bread with Blue Gum Honey

  • 1¼ cups oats
  • 4 small bananas
  • 2 eggs
  • ¼ cup vegetable oil
  • ½ cup Beerenberg Blue Gum Honey
  • 1 teaspoon vanilla essence
  • 1 teaspoon baking powder
  • ½ teaspoon bicarbonate soda
  • ½ cup almond meal


Preheat the oven to 180°C and line a loaf pan with non-stick paper.

Add the oats to a food processor or blender. Pulse until a coarse flour is achieved.

In a medium bowl mash three bananas. Add the eggs, oil, Beerenberg Blue Gum Honey and vanilla essence and mix to combine. Then add the oats, baking powder, bicarbonate soda and almond meal and mix to combine.

Pour into the prepared pan. Cut the remaining banana in half lengthways, and lay across the top of the pan. Bake for 45-50 minutes, or until a skewer inserted into the centre comes out clean. Allow to cool in the pan and cut into 8-10 slices.
