Ingredients
2 All butter croissants
150g thickened cream
150g cream cheese
1 tbsp Beerenberg Lemon Lime Curd + 2 tbsp to serve
Fresh fruit, to serve
Lemon & Lime zest, to serve
Icing sugar, to serve
Directions
In a bowl combine the thickened cream cream cheese and 1 tbsp lemon lime curd and mix with hand beaters until thick and smooth (about 3-4 minutes).
On a large cutting board slice a pocket into the croissants across the top. Spoon or pipe the lemon lime cheesecake mixture into the croissant pocket then top each with 1 tbsp of lemon lime curd, fresh fruit, lemon and lime zest, and a dusting of icing sugar.
