
Ingredients
1 x jar Beerenberg Sri Lankan 30 Min Meal Base
500g diced chicken (or swap for fish)
2 cups mixed veg, diced (e.g. beans & capsicum)
1 red onion, diced
4 tomatoes, diced
270ml tin coconut cream
15-20 curry leaves (optional)
Serve with steamed rice and papadams
Directions
Heat 1 tablespoon of oil in pan. If using chicken, add now with onion and curry leaves. Cook until brown.
Add contents of jar, coconut cream and tomatoes.
Stir to combine. Cover with lid and simmer for 10 minutes. Stir occasionally.
Add veg and cook for a further 10 minutes. If using fish, add in the last 5 minutes of cooking.
Remove from heat. Rest for 5 minutes before serving with steamed rice and papadams
