Apricot, Turkey & Brie Toastie

Ingredients

3 tsp Unsalted butter, softened

2 slices thick sourdough (or your preferred bread)

1½ tbsp Beerenberg Apricot Jam

100g shaved turkey

100g brie, sliced

½ cup mozzarella, freshly grated


Directions

Heat a frying pan over medium heat with 2 tsp of butter.

Butter the outside of each slice of bread. Spread the apricot jam evenly over the inside of both slices.

Place both slices in the pan, butter-side down. Sprinkle mozzarella over each slice, then layer the brie on top so it starts to soften and melt into the bread. Cook for 1-2 minutes, until golden underneath and the cheese is just beginning to melt.

On one slice only, pile the shaved turkey evenly over the melted cheese. Sandwich the two slices together, pressing gently.

Cook for another 1-2 minutes per side, until golden, crisp, and the cheese is fully melted. Slice and serve immediately.
