Ingredients
- 1½ tablespoons butter
- 2 brown onions, sliced
- 2 sprigs rosemary
- 4 sprigs thyme
- 2 bay leaves
- pepper
- 1 jar Beerenberg Slow Cooker French Chicken (Coq au Vin)
- 750ml red wine
- 4 x scotch fillet steaks, approx 2.5cm thick and 250g each
Method:
Place a frypan on medium heat and add 1 tablespoon of butter. Add the onions, rosemary, thyme, bay, and a big pinch of pepper. Cook for 15 minutes or until onions are very soft. Add the jar of Beerenberg Slow Cooker French Chicken (Coq au Vin) and red wine and simmer for 20 minutes or until reduced by half.
Whilst the gravy is cooking, heat a griddle pan or frypan on medium heat. Add the remaining butter and scotch fillet steak. Cook for 4 minutes before turning and cooking for another 3 minutes. Remove the steaks from the pan and allow to rest for 5-10 minutes. Add any leftover juices from the steak pan to the gravy pan.
To serve, place the steaks on 4 serving plates and top with red wine and onion gravy.
