Ingredients
- 500g watermelon
- ½ bunch mint, leaves picked
- ¼ red onion, finely sliced
- large handful baby salad leaves
- 3 tablespoons Beerenberg Honey Mustard Dressing
- 120g Danish feta
Method:
Remove the skin from the watermelon and cut into small wedges. In a large bowl, toss the watermelon, mint, red onion, salad leaves and Beerenberg Honey Mustard Dressing. Place in a serving bowl and crumble the feta on top.
