
Ingredients
350g green beans, trimmed
200g frozen peas, thawed
Zest of 1 lemon
Handful of fresh basil leaves
Handful of fresh mint leaves
100g feta, crumbled
60g toasted almonds, roughly chopped
2 tbsp Beerenberg French Dressing
Sea salt and cracked black pepper, to taste
Directions
Bring a pot of salted water to the boil. Cook beans for 2-3 minutes, or until just tender. Drain and refresh under cold water to stop cooking. Pat dry.
In a large bowl, toss green beans and peas with lemon zest, basil and mint. Season lightly with salt and pepper and drizzle over Beerenberg French Dressing. Transfer to a serving plate and scatter with feta and toasted almonds.
