Peanut Butter and Jelly Panna Cotta

Ingredients

1 tablespoon gelatin powder

2 cups milk

2 cups thickened cream

1 teaspoon vanilla extract

1½ cups caster sugar

3 tablespoons peanut butter

4 tablespoons Beerenberg Strawberry Jam

¼ cup roasted peanuts

fresh strawberries, sliced

Persian fairy floss, optional


Directions

In a small bowl, add the gelatin and half the milk. Stir to combine, and set aside.

Place a saucepan over medium heat. Add the remaining milk, cream, vanilla, sugar, peanut butter, and half of the Beerenberg Strawberry Jam. Stir to combine, and heat until just simmering. Remove from the heat, add the gelatin mix, and stir until gelatin is dissolved.

Strain the mixture over a large pouring jug or bowl. Pour the mixture into 6 glasses and place in the fridge for 2 hours.

In a small bowl, mix the remaining Beerenberg Strawberry Jam with 2 tablespoons of boiling water. Evenly distribute the jam to the 6 glasses, and place in the fridge for another 2 hours.

Once set, top with peanuts, strawberries and fairy floss before serving.
