1 small head of cauliflower
2 tbsp olive oil
1/2 tsp smoked paprika
1/2 tsp ground turmeric
1/2 tsp cracked black pepper
2 tbsp grated parmesan cheese
FOR THE DIPPING SAUCE:
1/4 cup sour cream
1/4 cup mayonnaise
Cut the cauliflower into even sized florets.
In a small bowl mix together the olive oil, 3/4 jar Beerenberg One Pot Mexican 30 Minute Meal Base, smoked paprika, turmeric powder and pepper together.
In a large bowl, add the florets and toss the cauliflower to coat.
Set the air fryer at 200°C and timer for 10 minutes.
Place cauliflower florets in a single layer in air fryer basket.
Cook cauliflower for 10 minutes or until golden brown.
Serve immediately sprinkled with grated parmesan and spicy dipping sauce on the side.
Spicy Dipping Sauce:
Combine ¼ cup of sour cream, ¼ cup of mayonnaise, remaining Beerenberg One Pot Mexican 30 Minute Meal Base and a generous squeeze of lemon juice.
