Ingredients
- 2 tablespoons chia seeds
- 2/3 cup coconut milk
- pinch of ground cinnamon
- 3 teaspoons Beerenberg Apricot Jam
- 1 apricot, pitted and sliced
- 3 strawberries, sliced
- ¼ cup natural yoghurt
Method:
In a small bowl, mix the chia seeds, coconut milk, cinnamon, and half of the Beerenberg Apricot Jam. Allow to sit for 5 minutes for the chia seeds to expand. Transfer to a jar or container.
On top of the chia pudding, layer the fresh apricot and strawberries, yoghurt, and remaining Beerenberg Apricot Jam. Store in the fridge overnight before serving.
