Ingredients
1 jar Beerenberg Malaysian Kapitan Curry 30 Minute Meal Base
1kg chicken thigh
1 brown onion
2 cups green beans
2 cups cauliflower
400ml coconut milk
SERVE WITH:
Steamed white rice
Fresh coriander
Directions
Heat 1 tablespoon olive oil in pan. Add diced onion and diced chicken. Cook until brown
Add coconut milk, cauliflower and the contents of the jar.
Stir to combine. Cover with lid and simmer for 15 minutes. Stir occasionally.
Add sliced beans and cook for a further 5 minutes.
Remove from heat. Rest for 5 minutes before serving. Serve with rice and fresh coriander.
