Mexican Chopped Salad with Mango, Lime & Chilli Dressing

Ingredients

2 corn cobs

1 red capsicum, diced

1 green capsicum, diced

2 tomatoes, diced

½ red onion, diced

2 avocado, diced

1x 400g tin black beans, drained

½ bunch coriander, roughly chopped

½ bottle Beerenberg Mango, Lime & Chilli Dressing

100g tortilla strips


Directions

Fill a large saucepan with water and place over high heat. Once boiling, add the corn cobs. Cook for 5 minutes before draining the hot water and running the corn under cold water until cool. Cut the kernels from the cobs and place in a large serving bowl.

To the serving bowl add the red & green capsicum, tomato, onion, avocado, black beans, coriander and ½ bottle of Beerenberg Mango, Lime & Chilli Dressing. Toss to combine and top with tortilla strips to serve.
