1 diced brown onion
1 diced red capsicum
400g tin black beans
400g tin refried beans
250g tin red kidney beans
250ml vegetable stock
Heat 1 tablespoon olive oil in a pan. Add onion and red capsicum. Cook for 5 minutes.
Add remaining ingredients, including the contents of this jar. Simmer for 15 minutes, lid off. Stir occasionally.
Remove from heat and rest for 5 minutes. Serve with tortillas, sour cream and sliced avocado.
