Ingredients
- 500g beef mince
- 1 brown onion
- 200ml beef stock
- 1 x 420 can sweetcorn
- 1 x 400 can black beans
- 1 x Beerenberg One Pot Mexican 30 Minute Meal Base
Method:
Heat 2 tablespoons olive oil in pan. Add diced onion and beef mince. Cook until brown.
Add sweetcorn (drained), black beans (drained), and the contents of this jar, using the stock to rinse out jar.
Stir to combine. Cover with lid and simmer for 20 minutes. Stir occasionally.
Remove from heat. Rest for 5 minutes before serving. Serve with avocado, tomato, sour cream and corn chips.
