Ingredients
- 12 slider buns
- 1 bottle of Beerenberg African Spice Taka Tala Sauce & Marinade
- 2 x 400g tins of Jackfruit in Brine
- ¼ of a red cabbage
- 2 carrots
- 1 cup of rice bran oil
- 1 bunch of coriander
- juice of half a lime
- salt
Method:
Preheat your oven to 170c.
Drain the jackfruit and place in a baking tray, cover the jackfruit with Beerenberg African Spice Taka Tala Sauce & Marinade and wrap the baking tray with foil. Cook in the oven for 50 – 60 minutes.
While your jackfruit is cooking make the coleslaw, shred the red cabbage, grate the carrots and coarsely chop the coriander. Make a simple dressing with the lime, oil and salt and combine with cabbage, carrot and coriander.
To assemble the sliders cut the buns in half. Portion the jackfruit onto each slider, with a generous spoon of coleslaw and top with the other half of the bun.
