1 tablespoon oil
2 chicken breasts, sliced
salt & pepper
¼ Chinese cabbage, sliced
1 cucumber, sliced
large handful snow peas, tops removed
4 spring onions, chopped
125g crunchy noodles
4 tablespoons Beerenberg Mango, Lime & Chilli Dressing
Heat a large frypan over high heat and add the oil. Place the chicken breast in the pan with a large pinch of salt and pepper. Cook for 3 minutes before turning and cooking for another 2 minutes, or until cooked through. Remove the chicken from the heat.
In a large bowl, mix together the cabbage, cucumber, snow peas, spring onion, crunchy noodles and Beerenberg Mango, Lime & Chilli Dressing. Place in a large serving bowl and top with the chicken to serve.
